Slap Ya Mama Good Chicken And Sausage Gumbo

This is the best gumbo recipe handed down to me by my late ex-mother-in-law, who was 100% cajun!
Ingredients:
1 c flour
1/4 c olive oil
2 onions finely chopped
fresh garlic-to your taste-i like lots, so put in approx. 6 minced cloves
1/2 c each: finely chopped bell pepper, and celery
1 whole chicken, cooked deboned and chopped in medium to large pieces
2 packages (approx 24 oz) smoked sausage (cajun is the best)
6 c chicken stock-this is approx.
1 c chopped green onion
1/4 c parsley
1 tbs cajun spice (tony cachere's) or approx each: 1 tsp cayanne pepper, 1 tsp black pepper, 2 tsp salt
Directions:
1. In large pot, add flour and water, and cook until medium brown-stirring frequently. This is called Roux (Roo). Roux is the base to a lot of cajun recipes.
2. Add onion, bell pepper, celery and garlic.
3. Cook until veggies are soft.
4. Add chicken stock
5. Bring to boil, stirring until roux is disolved.
6. Add chicken and sausage (sausage should be sliced into small pieces and cooked to remove some of the fat)
7. Add parsley and green onions.
8. Simmer over low to med heat for 1-2 hours
9. Serve over rice.
10. Add Tabasco to your liking.
11. Great with potato salad and fresh garlic bread!
