Skinny Skillet Lasagna

A slimmed down, streamlined lasagna
Ingredients:
8 ounces italian turkey sausage
1/2 cup chopped onion (1 medium)
2 cups spaghetti sauce
1 cup water
2 cups lasagna noodles
1 1/2 cups zucchini
1/2 cup fat-free ricotta cheese
2 tablespoons parmesan cheese or 2 tablespoons romano cheese
1 tablespoon fresh parsley
1/2 cup reduced-fat mozzarella cheese
Directions:
1. Brown meat and onion in large skillet. Drain off excess fat.
2. Add spaghetti sauce and water. Bring to boil.
3. Add zucchini and noodles. Return to Boil.
4. Reduce heat, cover, and simmer for 12 minutes until pasta is tender.
5. Combine ricotta, Parmesan cheese, and parsley in a small bowl.
6. Drop the cheese mixture into the skillet in five or six mounds. Top each mound with mozzarella. Cover for 5 to 6 minutes, or until heated through.
7. Let stand ten minutes before serving.
