Skillet Cornbread With Prunes

Ingredients:
1/4 cup margarine, melted
1 1/2 cups unbleached all-purpose flour
1/2 cup yellow cornmeal
1/4 cup brown sugar
2 1/2 teaspoons baking powder
1 egg, lightly beaten
1 cup buttermilk
1 cup coarsely chopped pitted dried plum (prunes)
Directions:
1. Preheat oven to 375 degrees.
2. In a medium sized bowl, combine the flour, cornmeal, sugar and baking powder.
3. Make a well in the center.
4. Pour margarine into the well.
5. Add egg, buttermilk and prunes.
6. Stir just to mix all ingredients together.
7. DO NOT OVERMIX.
8. Put the batter into a greased baking dish.
9. Bake for 30 minutes or until the bread is golden on top.
10. Allow it to cool.
11. Cut into 8 wedges.
