Skillet Chicken and Rice

A dish thats easy and quick. Tastes good too!
Ingredients:
2 lbs chicken pieces, skinned
1 teaspoon olive oil
2 carrots, peeled,sliced 1/2 inch
1/2 cup onion, chopped
1 teaspoon chicken bouillon granule
2 cups water
3 cups fresh mushrooms
3/4 cup long-grain rice
1 teaspoon poultry seasoning
1/4 teaspoon salt
Directions:
1. Brown chicken pieces, in oil, over medium heat in a 12-inch skillet with non stick coating, about 15 minutes.
2. Remove and set aside.
3. Drain fat from skillet, if necessary.
4. Add mushrooms, carrots, rice, onion, bouillon, poultry seasoning, 2 cups water, and salt.
5. Place chicken atop rice mixture.
6. Simmer covered for 30 minutes on medium-low, or until chicken and rice are done.
7. Serves 4.
