Sizzling Shrimp With Corn Relish

Ingredients:
1 lime
1 tablespoon canola oil
1/2 cup shallot, chopped
1 tablespoon garlic, minced
1 tablespoon jalapeno, minced
1 1/2 lbs shrimp, peeled deveined
1 1/2 cups corn kernels, frozen
1/4 cup cilantro, dried
Directions:
1. Heat a 14 inch wok over high heat.
2. Add oil to wok, swirling to coat.
3. Add shallots, garlic and jalapeno to wok; stir-fry 30 seconds or just until shallots begin to brown.
4. Add shrimp to wok; stir fry 3 minutes or until shrimp are done.
5. Add corn; stir fry until corn is heated.
6. Stir in juice from lime and cilantro.
7. Yield: 4 servings.
8. Serving size 1 cup.
