6 cans of soup, not beer! Make this a delcious hearty soup packed with beans and spices
Ingredients:
1/3 cup chopped sweet onion
1/2 chopped sweet red pepper
1 clove minced garlic
1 pound smoked sausage cut into bite sized pieces
1 - 15.5 oz. can black beans, rinsed
1 - 15.5 oz. can red beans, rinsed
1 - 15.5 oz. can white beans, rinsed
1 - 10 oz. can mexican style corn
2 - 15 oz cans low salt chicken broth
1 packet fajita seasoning or taco seasoning
tortilla strips, sour cream and shredded cheddar cheese, for garnish
Directions:
1. In dutch oven, saute the onion and pepper in olive oil until the onion
2. is translucent.
3. Add the smoked sausage and cook until browned.
4. Add the garlic and cook for one minute.
5. Add the six pack and the Fajita seasoning and simmer, stirring occasionally, until the beans start to break up a bit and make a nice creamy broth.
6. Serve with a sprinkling of tortilla strips that are sauted to a golden
7. brown in a bit of oil.
8. You could also used slightly crushed tortilla chips.
9. Then top with a dollop of sour cream and some shredded cheddar
10. cheese to finish.
