O.K.,it's really Cincinnati Beer Cheese Dip,but it's so good I had to change the name!!!
Ingredients:
3 sharp cheeses, 6 ounces of each; try asiago, cheddar, cooper, parmesan, pecorino romano or manchego
1-1/2 ounces roquefort cheese
2 tablespoons butter
2 garlic cloves, minced
1 medium onion, finely diced
1 teaspoon worcestershire sauce
hot sauce to taste
1 cup dark beer
Directions:
1. In a mixing bowl, with an electric mixer, mix together all the cheese, butter, garlic, onion, Worcestershire sauce and hot sauce.
2. In a small saucepan, warm the beer but not to a boil.
3. Gradually add the warm beer to the cheese mixture and mix until of good dipping consistency.
4. Cover and refrigerate 1 hour before serving.
5. Really cheesey and flavorful spread for crackers!
