SINFUL NUT AND CHERRY PILAF This recipe came from a coworker. She makes this often for office potlucks and this is always one of the first things to go. Since obtaining this recipe, I have made it several times and it is such a treat. Read more . Goes great with fish or poultry.
Ingredients:
2 tablespoons sunflower oil
1 onion thinly sliced
1 tablespoon butter
1 pinch turmeric
2 cups long-grain brown basmati rice
1/4 cup unblanched almonds
3 tablespoons pine nuts
3 celery stalks finely sliced
1/2 pound fresh or frozen cherries pitted
1-1/2 teaspoons ground cinnamon
1 tablespoon lemon juice
1/2 cup chopped scallions
2 tablespoons chopped fresh dill
2 teaspoons freshly ground black pepper
1 teaspoon sea salt
Directions:
1. In a heavy bottomed saucepan heat oil then add onion and cook gently for 10 minutes.
2. Add butter, turmeric, rice, almonds and pine nuts to onion and stir 3 minutes.
3. Add celery, cherries and cinnamon then add 3-1/4 cups water and bring to a boil.
4. Stir once then cover and reduce heat to the lowest setting and simmer 35 minutes.
5. When rice is cooked stir in lemon juice, scallions and fresh herbs.
