Simply Potatoes, Vegetables & Shrimp Fettuccine

Ready, Set, Cook! Special Edition Contest Entry: Creamy Simply Potatoes, vegatables and shrimp sauce over fettuccine
Ingredients:
1 cup olive oil
3 garlic cloves (finely chopped )
1 green onion (finely chopped)
1 lb mushroom (sliced)
1 (8 ounce) can chicken broth
1 cup heavy cream
1 cup parsley (chopped)
3 cups spinach (chopped)
1 cup frozen baby peas
1 cup cheddar cheese (shredded)
1 teaspoon ground black pepper
1 teaspoon salt
16 ounces fresh shrimp (peeled, deveined and tails removed)
24 ounces simply potatoes traditional mashed potatoes (1 package)
16 ounces fettuccine
1 cup parmesan cheese (grated)
Directions:
1. Saute garlic and green onion in olive oil. Add chicken broth, sliced mushrooms, heavy cream fresh parsley, spinach, peas, shredded cheddar cheese, black pepper, and salt. Cook on medium / low heat until vegetables are tender and then stir in entire package of Simple Potatoes – Traditional Mashed Potatoes. Add shrimp and cook an additional 5 to 7 minutes until the shrimp are curled and tender. DO NOT OVER COOK or shrimp with become tough.
2. Bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; and then drain. Toss fettuccine in the shrimp sauce. Top with grated Parmesan cheese.
