Simply Amazing Stir Fry

A flavourful, filling, and incredibly healthy vegetarian stir fry!
Ingredients:
8 ounces silken light tofu
1 cup stir fry frozen vegetables
1 cup frozen green beans
1 cup frozen broccoli
1/2 cup frozen corn
1 cup frozen green beans
1/2 cup cooked minute brown rice
2 tablespoons reduced sodium soy sauce
Directions:
1. Spray a grill pan, george foreman, or nonstick skillet w/olive oil cooking spray.
2. Put the tofu on, and turn occcasionally until equally browned.
3. Meanwhile, put 1/4 cup water in another nonstick skillet, add in all vegetables and rice and cover. Cook until veggies defrost, and most of the water is absorbed.
4. Stir in rice, add in 1 tbs of soy sauce.
5. Put on plate, top with grilled tofu, and add remainder of soy sauce.
