Simple Potato Salad

This recipe was inspired by the one I learned from a video game, lol! But it is so simply delicious. It is quick and easy to put together with few ingredients. Enjoy!
Ingredients:
1 large russet potato
3 small carrots, peeled and diced
1/3 large cucumber, peeled and diced (i leave the skin)
1/2 cup mayonnaise
1/2-1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon fresh lemon juice
Directions:
1. Cook potatoes however you please. (I cube mine and steam them in a steaming basket over boiling water for about 15 minutes. I also leave the skin on, but you may peel them if you wish.).
2. Cook carrots however you please until slightly tender. (I steam these as well).
3. Place cooked cubed potatoes, cooked diced carrots, and diced cucumber in a bowl.
4. Add mayonnaise, salt, black pepper, and lemon juice and stir until well incorporated.
5. Chill, covered in refrigerator for at least 1 hour.
