This dish is a basic stew cooked in a crock pot or slow cooker while you are at work and ready when you get home.
Ingredients:
3 lb pork tenderloin
2 large potatoes, cut in 1 inch chunks
2 sweet or red onions, cut in half or left whole
2 stalks of celery, cut chop in small pieces
2 carrots, cut your favorite length
1 packet of onion soup mix mixed with 2 cups water
1 handfull of chopped parsley (or 1 tbsp dry)
3 or 4 basil leaves (or 1 tsp dry)
1 tbsp minced garlic
2 whole bay leaves
1 tbsp worchestershire sauce
salt and pepper to taste
2 tbspoons corn meal
Directions:
1. Rinse Pork Tenderloin and salt and pepper both sides and let sit
2. Add vegetables to Crock Pot or Slow Cooker one at a time (hardest ones first and so on)
3. Mix the onion soup and water and pour over the vegetables
4. Add garlic (adjust to your taste-I used a heaping tablespoon)
5. Salt and Pepper to taste
6. Place the Pork Tenderloin on top (I used two 1.5 lb pieces)
7. Cook 7-8 hours or until potatoes are done to your liking
8. About an hour before done, add the corn meal to thicken if desired
