The flavors of a chili relleno without the work, that is what drew me to this recipe. A healthier alternative to a fried chili relleno, this would make an awesome addition to any mexican themed meal.
Ingredients:
1 1/2 lbs monterey jack pepper cheese (shredded) or 1 1/2 lbs cheddar cheese (shredded)
1 (7 ounce) can diced green chilies (drained)
3 eggs (beaten)
1 1/2 cups milk
3 tablespoons flour
sour cream (for garnish) (optional)
Directions:
1. Preheat oven to 350 degrees. Spray a medium casserole dish with non-stick cooking spray.
2. Beat eggs and milk together. Add the flour and continue to beat until combined.
3. Fold in the green chilies and the cheese.
4. Pour into the casserole dish and back for 40-45 minutes.
5. Top with a dollop of sour cream and enjoy.
