Simple Mexican Rice

A simple,tasty Mexican rice.
Ingredients:
2 tb vegetable oil
1 onion,chopped
1 tsp. minced garlic
1 tsp chili powder
1tb ground cumin
1 c uncooked short-grain rice
1-3/4 c chicken broth
1/4 c tomato paste
Directions:
1. Preheat oven to 350 degrees.
2. Heat oil in a large skillet over med. heat. Add onion and garlic;cook and stir till onion translucent. Stir in chili powder and cumin,cook about 30 seconds. Add the rice,chicken broth and tomato paste and bring to boil.
3. Transfer to a 1 qt. casserole dish and cover with aluminum foil or a lid.
4. Bake 35 to 40 mins.,or until liquid has been absorbed and rice is tender. Let rest 3 to 5 mins before serving.
