Simple Mandarin & Avocado Salsa

This is better if left for the flavors to meld overnight
Ingredients:
1/2 red pepper diced small
1/2 red onion diced small
1 garlic clove minced
1/2 can mandarin oranges drained
1 avocado peeled pitted and diced
dressing
2 teaspoons olive oil
1 1/2 teaspoons lemon juice
1 teaspoon cider vinegar
1/4 teaspoon cilantro or herb of your choice
1/8 teaspoon salt
1/8 teaspoon black pepper
Directions:
1. 1. In a bowl mix the first four ingredients the avocado will go in when ready toserve.
2. 2. In another bowl mix the dressing ingredients and mix well together and then pour over the pepper/onion mix and coat.
3. 3. Cover and chill in the fridge for 8 hour or overnight
