Simple Garlic-Roasted Chickpeas With Paprika (Vegan & Gf)

Sometimes the easiest recipes end up being the tastiest! This is perfect just for one or two, but see my last step if you want to make more. Can also be easily doubled. It calls for a liberal sprinkling of paprika; 2 tsp is just an estimate. This is healthy, vegan, gluten-free, and very easy to make. I love the aroma these give off when they're baking in the oven!
Ingredients:
1 (15 ounce) can chickpeas, rinsed and drained
3 garlic cloves, peeled and finely chopped
1 tablespoon olive oil
2 teaspoons paprika (approx, see directions)
Directions:
1. Rinse and drain the chickpeas and place them in a bowl, and chop the garlic cloves very fine, mixing the two together.
2. Add the olive oil and stir, making sure the bowl's contents are well-coated.
3. Liberally sprinkle on paprika to your liking (I like a lot.) 2 tsp is just an estimate, put on as much or as little as you like.
4. Pour into a baking dish, chickpeas will overlap.
5. Bake at 375F for 30-35 minutes, about 25 if you want them softer. Turn on the broiler for the last 5 minutes if you want crunchy chickpeas.
6. Want to make more with a bigger can? Use a 19-oz can of chickpeas, about 1 1/2 tablespoons olive oil, more paprika, and 4 garlic cloves. Makes 3-4 servings that way. Doubling works too if you're making more for a group/OAMC.
