This is an easy bread that tastes delicious with any meal. It is adapted from a Recipezar recipe. FYI, flax needs to be ground for your body to absorb it. “Benefits of flax seed as shown in many studies, include lowering total cholesterol and LDL cholesterol (the Bad cholesterol) levels. Read more . Other benefits show that flax seed may also help lower blood triglyceride and blood pressure. It may also keep platelets from becoming sticky therefore reducing the risk of a heart attack”.
Ingredients:
6 1/2 cups flour, divided (a mix of whole wheat and white works well)
3/4 cup ground flax seeds (flax meal)
3 tablespoons sugar
2 teaspoons salt
1 tablespoon fast rising instant yeast or regular yeast
2 cups water
1 cup milk
1 tablespoon vegetable oil
options- use a spiced olive oil, or add chopped dried herbs to the dough. you can also brush the tops of the loaves with oil/butter before baking
Directions:
1. Set aside 1 cup flour.
2. Mix remaining flour, flax seed, sugar, salt, and yeast in a large bowl.
3. Heat water, milk, and oil until hot to the touch (about 125-130°F) but DO NOT BOIL.
4. Stir milk mixture into dry mixture. Mix in enough reserved flour to make a soft dough that does not stick to the bowl.
5. Turn out onto floured board and knead until smooth and elastic, about 8 minutes.
6. Cover dough and let rest 10 minutes.
7. Divide dough in 1/2 and shape into loaves.
8. Place into 2 greased (8 1/2 inch x 4 1/2 inch) loaf pans.
9. Cover and let rise in a warm place until dough has doubled in volume (about 40-50 minutes).
10. Bake in a preheated oven at 400°F for 30-35 minutes.
11. Remove from pans and cool on wire racks.
12. Note- This bread can eaisly be made with a stand mixter. Just mix dry ingredients with paddle and use the dough hook for kneeding- you may need a bit more flour for this.
