Easy to prepare but at the same time delicious and useful. It came from the Rector's restaurant in Times Square. The year 1928.
Ingredients:
2 tablespoons butter
1 1/2 tablespoons flour
1 tablespoon curry powder
1/4 teaspoon salt
1 cup chicken stock
1 egg yolk
2 tablespoons heavy cream
Directions:
1. melt butter.
2. blend in flour, curry powder, and salt.
3. slowly add hot stock and bring to boiling.
4. boil 2 minutes.
5. remove from heat
6. add egg yolk lightly beaten with cream.
