Easy-to-make chicken salad. I use chicken breasts that I've poached with onion, celery and a bay leaf, then cooled and chopped. You can use low-fat mayo to reduce calories.
Ingredients:
2 cups chicken, chopped
1/8 cup mayonnaise
1/6 cup miracle whip
2 tbsp mustard
2 tbsp lemon juice
1/2 cup onion, chopped
1 dash pepper
Directions:
1. Mix mayonnaise, Miracle Whip, mustard, lemon juice, and pepper until blended.
2. Pour dressing over chicken and onion in medium bowl; mix until chicken and onion are coated. Serve on bread or sandwich roll.
