Simple Cheesecake...with Some Jazz!

I found a simple cheesecake recipe...and then took it up a notch. It's so quick and easy to make!! I've also done this recipe in cupcake cups (making mini cheesecakes!!) which turned out to be a complete success! You can use whatever fruit you enjoy to make this cake your ultimate favorite!! Hope you guys enjoy this as much as we do. Let me know how yours turns out!!
Ingredients:
1 cup graham cracker crumbs (you can buy healthy grams and make your own)
1/4 cup organic sugar
1 tablespoon butter, melted
1/2 cup chocolate chips (i use semi-sweet morsels)
2 organic eggs
12 ounces cream cheese, softened (two blocks)
1 cup organic sugar
1/2 teaspoon vanilla
1/3 cup organic berry preserves (i use organic frozen berries...reduced and cooked down on the stove into a sauce consistency)
Directions:
1. Preheat oven to 350 degrees
2. Crust:.
3. In bowl, combine graham cracker crumbs and sugar, then add melted butter to coat.
4. Press crumbs into spring-form pan to make crust.
5. Spread a layer of chocolate chips over the crust.
6. Filling:.
7. In mixing bowl, cream the cream cheese.
8. Add eggs, one at a time, and mix until combined with the cream cheese (you should stop the mixer and scrape the bowl down during this process-making sure it's all incorporated really well).
9. Add sugar and vanilla, and mix well on a lower speed.
10. Add in fruit preserves or sauce and mix.
11. Add cheesecake mixture to the crust and put in the oven.
12. Bake 35-40 minutes.
13. When you take it out of the oven, put another layer of chocolate chips on top. The heat will melt them, and then spread the chocolate over top of cake.
14. Cool to room temp, cover with plastic wrap, and refrigerate
15. Add fresh fruit on top when ready to serve!
