Simple Chard

This is as the name says...simple. Have fun gardening or marketing and pick the tenderest swiss chard or endive you can find. Enjoy the freshness of the food.
Ingredients:
1 lb swiss chard
4 quarts boiling water
1/4 lb bacon, cooked and crumbled and bacon grease (optional)
butter (optional)
salt and pepper
Directions:
1. clean chard by rinsing under cold water and shaking off liquid. trim off ends and place in large pot of boiing water.
2. blanch about 2 min, remove and strain over collander.
3. add crumbled bacon pieces and a bit of the bacon fat for taste
4. or.
5. add butter to taste.
6. ****replace swiss chard with endive or do a combination of the 2. This make a nice alternative to salad.
7. times are approximate as I usually do enough for 8 people and in a large vat as our main meal portion.
