Simple but Delicious Chicken and Dumplings

I've made this for years and tweaked it from inspiration on the back of a Bisquick box. It is always so tasty and comforting. This method produces light and fluffy dumplings not the noodle kind. Great with the chicken and pot liquor on top. Cooking time includes time to take the chicken off the bone. You can substitue thigh meat if you prefer dark meat, I would use 6 thighs for 4 people.
Ingredients:
3 cups bisquick baking mix
1 cup milk
4 chicken breasts, with bones and skin
1 teaspoon salt
1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon salt (yes another)
Directions:
1. Place the chicken breasts in a large pot with a lid. Cover with water and bring to a boil. Add one teaspoon salt and simmer covered until chicken is cooked through.
2. Remove chicken breasts and allow to cool. Skim off any residue or fat from the broth but leave water in the pot.
3. In a medium large mixing bowl, stir remaining ingredients until just combined.
4. Drop mixture by heaping tablespoons into hot broth. Cover and cook 10 minutes.
5. While cooking, remove chicken from bones, discarding skin and bones. Tear chicken into bite size pieces.
6. Remove the cover, put in the chicken and cook uncovered 10 more minutes.
7. Serve hot in bowl and be sure to ladle in some of the pot liquor for your big fluffy dumplings.
