My daughter was introduced to this pie last Christmas while visiting my father and it was love at first bite. Thankfully it is a very easy pie to make as we make it often since she has just gotta have it. Whether served for a family dinner or a dinner party this pie is sure to please everyone at the table and has even caused some trickery to get the last piece. A mixture of strawberries or blueberries with the bananas is also very good.
Ingredients:
4 ounces white chocolate
8 ounces cream cheese, softened
1/4 cup sugar
1 teaspoon vanilla
1/3 cup sour cream (or 4 oz vanilla yogurt)
1/2 cup heavy cream
2 large bananas
1 shortbread pie crust
dark chocolate (optional)
Directions:
1. Melt white chocolate in microwave. Usually about 1 1/2 to 2 minutes works.
2. Beat cream cheese, sour cream, sugar, and vanilla until smooth.
3. Beat in melted chocolate.
4. Whip heavy cream until very firm and fold into chocolate mixture.
5. Slice bananas on crust and top with filling.
6. Shave or grate dark chocolate on top as a garnish if desired. Chill for about 2 hours or overnight to set.
