Add the spinach to the slow cooker quickly to keep too much heat from escaping.
Ingredients:
1 small onion, chopped
1 cup matchstick-cut carrots
1 tablespoon bottled minced garlic
1 teaspoon chopped fresh rosemary
1/2 teaspoon crushed red pepper
4 (4-ounce) skinless, boneless chicken breast halves
3 tablespoons dried tomato sprinkles (such as l'esprit)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 (14.5-ounce) can diced tomatoes with green pepper and onion (such as delmonte)
1/2 cup dry red wine
6 cups fresh spinach
2 cups hot cooked pasta
Directions:
1. Place first 11 ingredients in a 5-quart electric slow cooker in order listed. Cover with lid; cook on high-heat setting 3 1/2 hours.
2. Add spinach (do not stir). Cover with lid; cook on high-heat setting 10 minutes. Uncover and stir until spinach wilts. Top pasta with chicken and vegetable mixture.
