My family loves shrimp toast and when our favorite Chinese Restaurant closed at home we started looking for a good recipe. This one is pretty good, but not the same....I think it has to do with the oil that they use over and over for frying in. You just don't get the same taste at home.
Ingredients:
1 lb shrimp, shelled and de-veined
1 teaspoon salt
1 egg, beaten
6 slices white bread, crust removed
1 small onion, grated
1/4 teaspoon pepper
1 teaspoon all-purpose flour
peanut oil (for frying)
Directions:
1. Chop the shrimp very fine and add the grated onion. Mix with the salt, pepper, egg and flour. cut each slice of bread in to four triangles and spread the shrimp filling over one side of each slice of bread. Fry in a skillet in the hot oil turning as needed. Be sure that there is enough oil in the skillet so that the toasts float and don't stick to the bottom of the pan.
2. These may be made ahead and frozen before frying. Do not thaw before frying.
