If you need a great little appetizer that is both elegant and easy, try these! I use these to cater with quite often. I do recommend a very good quality thin sliced bread, such as Sara Lee white to make these. Regular sandwich bread would be dry/gummy too quickly. Read more . One alternative would also be to use some thinly sliced baguette or even the mini croissants with this piped on top. It's lovely. Enjoy! -Kn0x-
Ingredients:
1 (8 oz.) pkg. cream cheese, softened
5 tbsp. mayonnaise
3 tbsp. catsup
2 tbsp. prepared mustard
1/4 teaspoon garlic powder
1/2 tsp. black pepper
1/2 fresh lemon, squeezed for juice
3 cups chopped cooked shrimp (about a pound)
1 c. finely chopped celery
1/3 cup finely minced green onion
1 loaf sliced bread of choice
olive slices, stuffed green or black, for garnish
thinly sliced cucumber, twisted, for garnish
Directions:
1. Blend your fist 10 ingredients in a medium mixing bowl.
2. Trim crusts off bread.
3. Very lightly butter bread slices.
4. Cut into desired shapes with knife or cookie cutter.
5. Either pipe or spread mixture onto bread.
6. Garnish as desired.
7. Enjoy!
8. *May be stacked and covered with Saran or placed into Tupperware and in fridge for up to 6 hours before serving. Any longer and things go down hill. For catering/parties, prepare your spread mixture the night before and pipe onto the breads the day of service.*
