So I joined the I give you Four and you give me more group. One of the four is Spinach, lemon, mushrooms and almonds. What do you want to do with these ingredients? A reasonable question, the response of, Beats the hell out of me! Read more ! ...................is not well received and I am afraid that, it might be acted upon. Now, come on you have to admit that is not the smartest phrase that we ever came up with. All it does is put a kernel of an idea into someone's head that they might act upon. My family has a tradition of trying to make something out of nothing. My mother's step mom (a real witch) it took a house falling on her to finely send her to her just rewards. We still have the shoes she was wearing. Did you know that flying monkeys are not house broken? So where was I? Spinach... lemon,...mushrooms... almonds... I give you four, you give me more group..what to do with...ok I'm back! So this is what I came up with.
Ingredients:
1 lb large mushroom caps - cleaned with stems removed
2 oz slivered almonds - toasted and chopped
8oz fresh chopped spinach - cooked and drained and cool to the touch
4 oz shrimp - cleaned and cooked minced
1 tbs lemon juice
1/2 tsp salt
1/4 tsp black pepper
6 tablespoons butter
1 lemon cut into wedges
2 cloves minced garlic
1 small onion minced onions
1 cup fine bread crumbs
Directions:
1. Wash and trim the end of stems from mushrooms.
2. Pop remaining stem out. Chop stems and set aside.
3. Melt 2 tablespoons butter; brush over mushrooms.
4. Spray a shallow baking dish (about 8-inch square, or one which will fit mushrooms in one layer) with butter-flavored spray or grease with butter.
5. Melt remaining butter in skillet; add reserved chopped stems, minced onions and garlic. Cook until vegetables are tender.
6. Toss shrimp with lemon juice
7. Combine cooked ingredients with bread crumbs, shrimp, spinach, and seasonings. Fill each mushrooms, piling up.
8. dust each mushroom with almonds
9. Bake at 350° for 15 to 20 minutes, until hot and mushroom caps are tender
