Shrimp Stir Fry with White Rice

Shrimp Stir Fry with white rice
Ingredients:
2 tbl olive oil
2 c broccoli, chopped
1 cup snow peas
1/4 c green onion, chopped
1/2 c bean sprouts
8 oz mushrooms, sliced
2 tbsp soy sauce
16 oz medium shrimp (peeled and deveined)
1/2 c onion, sliced
2 c white rice
1/2 c carrots, diced
1/2 c red pepper, chopped
1 clove garlic
1 tbsp ginger
Directions:
1. Cook rice according to package directions.
2. Heat pan or wok and add 2 Tbs of olive oil
3. Add garlic and ginger
4. Add shrimp and broccoli and cook 1.5-2 min.
5. Add mushroom and onion cook additional 1.5-2 min.
6. Add snow peas, green onion, bean sprouts, and soy sauce cook 1-2 min.
7. Turn heat to low cover and let steam for 2 min.
8. Serve over rice.
