Ingredients:
2 tbls canola oil
10 large shrimp
1 1/2 cup of chopped onion
1 1/2 cup chopped broccoli
2 cup bok choy
2 cups bean sprouts
3/4 cup carrots
4 ounces snow peas
1/2 cups low sodium chicken broth
Directions:
1. 1. Saute onion, carrots and broccoli in half the olive oil.
2. 2. Add chicken broth a little at a time, stirring regularly
3. 3. Add shrimp .
4. 4. Stir together over low heat. Add a bit of water and cover until shrimp is done.
5. 5. Add bok choy and bean sprouts.
