Shrimp Stir Fry

olive oil to saute, oyster sauce for flavor, 4 veggies
Ingredients:
1 lb shrimp, raw in shells
2 tablespoons olive oil, divided
1 tablespoon garlic, minced
1 head bok choy, sliced
1 large bell pepper, diced
1/2 cup scallions, sliced
1 cup asparagus, tips, cut in 1 pieces
4 oz mushrooms, sliced
3 tablespoons oyster sauce
Directions:
1. Heat 1 Tablespoons of olive oil in a large stir fry pan or wok to medium high heat.
2. Add the shrimp, and stir contsantly until pink and fragrant.
3. Remove shrimp & set aside on a plate.
4. Heat remaining olive oil in pan.
5. Add garlic & scallions & stir for a minute or 2.
6. Add bok choy and stir for another 2 minutes, cover the pan to steam & wilt bok choy leaves.
7. Add pepper, asparagus & shrooms, and stir another minute or 2.
8. Add shrimp to veggies & stir fry until warm.
9. Add oyster sauce and stir for another minute until well-mixed.
10. Serve immediately.
