This ginger-spiced dish is a tasty way to enjoy a serving of vegetables.
Ingredients:
1 pound broccolini, trimmed
2 teaspoons olive oil
1/4 cup sliced green onions
1 tablespoon thinly sliced peeled fresh ginger
3/4 pound medium shrimp, peeled and deveined
1/2 teaspoon salt
2 tablespoons shrimp butter
3 cups hot cooked long-grain brown rice
Directions:
1. Cook Broccolini in boiling water for 2 minutes or until nearly tender; drain.
2. Heat a large nonstick skillet over medium-high heat. Add oil to pan; swirl to coat. Add onions and ginger; sauté 1 minute. Add shrimp, salt, and Broccolini; sauté 4 minutes or until shrimp are done. Stir in Shrimp Butter; cook for 30 seconds or until butter melts. Serve over rice.
