Shrimp Salad With Bacon Dressing

You can toss this together in about 20 minutes, chopped romaine also works well if your not a fan of spinach.
Ingredients:
7 slices bacon, cut into small pieces
1 red onion, sliced
1 cup mushroom, sliced
8 ounces shrimp (cleaned and peeled)
2 tablespoons pine nuts
2 hard-boiled eggs, sliced
6 ounces baby spinach
3 tablespoons red wine vinegar
1 dash salt and pepper
Directions:
1. Cook bacon in skillet till crispy, about six minutes over medium-high heat, them transfer them onto a plate lined with paper towel. In the same skillet, add onion and mushrooms to hot pan and cook about three minutes. Season shrimp with salt and pepper and add to the pan along with the pine nuts, cook for about four minutes then add in the vinegar and more salt and pepper, if the pan looks to dry add a splash of olive oil. Divide the spinach, eggs and bacon among four plates and top each with the hot shrimp mixture and some of the dressing from the pan.
