Shrimp Salad-Stuffed Endive

Ingredients:
1/2 pound cooked peeled shrimp, coarsely chopped (about 1 1/2 cups)
1/4 cup chopped celery
1/4 cup chopped red bell pepper
1/4 cup chopped red onion
1/4 cup light mayonnaise
3 tablespoons chopped green onions
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 heads belgian endive (about 10 ounces), separated into leaves
2 teaspoons chopped fresh dill
Directions:
1. Combine first 9 ingredients in a bowl, stirring to combine.
2. Spoon 1 rounded tablespoonful of shrimp salad onto end of each endive leaf; sprinkle evenly with dill.
