From Land 'O Lakes, this cool seafood salad is perfect to serve for a summertime supper. It's been years since I had a really good shrimp salad, so I was excited to find this one!
Ingredients:
3 tablespoons mayonnaise
1/8 teaspoon salt
1/8 teaspoon coarsely ground pepper
1 pound cooked deveined shrimp, each cut in half
3 hard-cooked eggs, chopped
1/4 cup green onions, sliced 1/4-inch
1 tablespoon chopped fresh dill

*substitute 1 teaspoon dried dill weed.
Directions:
1. Stir together mayonnaise, salt and pepper in medium bowl. Stir in shrimp, eggs, green onions and dill. Cover; refrigerate at least 1 hour.
