SHRIMP POTATO SKINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Irving, Texas in 1988.
Ingredients:
8 baking potatoes
1/2 cup butter melted
1/2 teaspoon salt
1/2 teaspoon paprika or chili powder
1/2 cup green onions finely chopped
1/2 cup bacon cooked and finely chopped
1/2 cup chopped shrimp
1/2 cup green bell pepper finely chopped
1 cup shredded cheddar cheese
1 cup sour cream
Directions:
1. Scrub potatoes and bake at 400 for 1 hour or until tender.
2. Cool potatoes slightly then cut in half lengthwise leaving 1/4 pulp with the skins.
3. Cut skins in half either across or in strips.
4. Brush skin sides with melted butter and place on baking sheet.
5. Sprinkle pulp sides with salt and paprika.
6. Cover pulp with green onions, bacon, shrimp and green pepper then top with cheese.
7. Bake at 450 for 15 minutes then garnish each with a dollop of sour cream.
