Adapted from 'Great British Cooking' by Jane Garmey. This is a great spread to serve as an appetizer with toast or crackers.
Ingredients:
1/2 lb shrimp, cooked and peeled
5 tablespoons olive oil
1 lime, juice of
1/4 teaspoon cayenne pepper
1/2 teaspoon dried basil
1/4 teaspoon ground coriander
salt
Directions:
1. Combine all ingredients in a food processor, and pulse until a paste is formed. Taste for seasoning, then place in a serving dish, cover, and chill for several hours before serving with toast or crackers.
