Shrimp & Lemon Skewers

You can use precooked shrimp and cut down the grill time.
Ingredients:
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
3/4 tsp lemon zest, finely grated
1 1/2 tsp fresh lemon juice
1/8 tsp kosher salt
1/8 tsp fresh ground black pepper
3 cloves garlic, minced
40 large shrimp, peeled and deveined
3 lemons , sliced into 16 1/4 slices
Directions:
1. Combine marinade ingredients (olive oil through garlic) in a zip-lock bag. Add shrimp to bag, seal, shake, and refrigerate for 30 minutes or up to 3 hours.
2. Remove shrimp from marinade and thread with lemon slices onto presoaked skewers, about 5-6 per skewer. Reserve marinade for basting.
3. Grill shrimp 3 minutes per side over medium heat, basting with reserved marinade.
4. Serving size is 2 skewers per person.
