Basic Jambalaya recipe (May use Zatarains box mix for rice and spices)
Ingredients:
215 g rice, raw white
43 g brown rice
794 g tomatoes, diced
400 g shrimp
183 g green pepper, diced
183 g celery, diced
220 g onion, diced
3 cups water
33 g tomato paste
7 g sugar
6 g garlic, minced
1 tbsp oil
1/8 tsp cayenne pepper (or 1 tsp cajun spice)
Directions:
1. Saute tomatoes, peppers, onion and celery in oil until clear
2. Add Tomato paste and sugar and cook 2 minutes
3. Add 3 cups of water and rice with cajun spices
4. Bring to a boil, reduce heat, cover and simmer 20 minutes
5. After 20 minutes add the shrimp and cook 5 minutes
6. Remove from heat and let sit covered 5 minutes to absorb excess moisture
