Shrimp Fried Rice

My honey's Fave! Use left over rice or day old plain rice for best results
Ingredients:
2 cups basmati rice
1 tbs butter
3 tbs olive oil
250 g frozen mixed veg
250 g shrimp
3 knorr seasoning cubes
1 tbs scotch bonett chile
30 g onion
1 tbs curry powder
2 cloves garlic
1 raw eggs
2 cups water
Directions:
1. Cook rice according to instructions.
2. Let cool fully.
3. In large skillet, heat oil
4. Add onions, mixed veg, chile, shrimp and garlic
5. Cook till shrimp turn pink
6. Add curry powder and seasoning cubes
7. add eggs and scramble cook until done,
8. Slowly add in cooked rice and gently stir making sure grains are coated.
9. Add butter and cook on high heat for 5 mins
