Shrimp Fried Rice

Ingredients:

  • 2 cups basmati rice
  • 1 tbsp butter
  • 3 tbsp olive oil
  • 250 g shrimp
  • 1 tbsp scotch bonett chile
  • 30 g onion
  • 1 tbsp curry powder
  • 2 cloves garlic
  • 2 cups water

Directions:

  1. Cook rice according to instructions.
  2. Let cool fully.
  3. In large skillet, heat oil
  4. Add onions, mixed veg, chile, shrimp and garlic
  5. Cook till shrimp turn pink
  6. Add curry powder and seasoning cubes
  7. Add eggs and scramble cook until done,
  8. Slowly add in cooked rice and gently stir making sure grains are coated.
  9. Add butter and cook on high heat for 5 mins
