Shrimp Fried Rice

easy and healthy one pan meal, can sub almost any vegetables you have on hand
Ingredients:
1 1/2 cups brown rice, uncooked
2 tablespoons soy sauce
2 large eggs
6 cups chard leaves (or other vegetable)
2 tablespoons coconut oil
1 tablespoon sesame oil
3 tablespoons stir-fry sauce
1 lb shrimp, precooked
Directions:
1. Cook brown rice in rice cooker with water and soy sauce.
2. Scramble eggs and set aside.
3. Stir fry chard or vegetables in oils.
4. Add cooked rice and stir fry sauce and saute for 3 minutes.
5. Add shrimp and cook just until warm.
6. Toss in scrambled eggs and serve.
