Here's a low calorie recipe for delicious Shrimp Fettuccine.
Ingredients:
6 ounces green fettuccine
1 tablespoon olive oil
2 cups sliced mushrooms
2 tablespoons sliced green onion tops
1/2 cup bottled clam juice
14 ounces peeled and deveined medium shrimp
1/2 cup plain low-fat yogurt
1/4 cup light sour cream
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/4 teaspoon white pepper
1/4 teaspoon dried thyme, crushed
1/4 teaspoon dried oregano, crushed
1/4 teaspoon onion powder
1 ounce grated fresh parmesan cheese
Directions:
1. In large pot of boiling water, cook fettuccine 10 – 12 minutes, until al dente. Drain and keep warm.
2. In large non-stick skillet, heat olive oil. Add mushrooms and 1 tablespoons green onions. Cook about 5 minutes or until mushrooms are just tender.
3. Add clam juice and bring to a boil.
4. Add shrimp and cook just until shrimp are pink. Remove from heat.
5. Add yogurt, sour cream, and seasonings.
6. Serve over cooked fettuccine noodles and sprinkle with Parmesan cheese.
