From the New Orleans restaurant Mr. B's Bistro in the French Quarter, this soup is more of a main dish, serve with a glass of white wine, loaf of French bread and a garden salad and you are good to go!
Ingredients:
1 1/2 cups butter cut into 1/2 inch chunks
56 medium shrimp, shelled and de-veined (about 2 1/2 lbs)
1 1/2 cups cleaned and sliced mushrooms
4 garlic cloves, peeled and chopped
7 cups chicken broth boiling hot
1 1/4 cups chopped long green onions
1/4 cup chopped fresh parsley
1 loaf french bread
Directions:
1. Melt 1/2 cup of the butter in large heavy saucepan over medium high heat
2. Add shrimp, mushrooms and garlic and saute' till shrimp are pink, about 1 minute
3. Carefully stir in boiling broth, green onion and parsley.
4. Remove from heat and add remaining butter and stir till melted. Ladle into heated bowls and serve immediately with French bread. Bon appetit!
