Ingredients:
1/3 cup olive oil
2 teaspoons dijon mustard
1/3 cup fresh lemon juice
3 cups farfalle pasta, cooked
1 cup cooked shrimp, peeled
1/2 cup cherry tomatoes, cut in half
1 lb baby spinach, washed drained
2 shallots, minced
1 avocado, peeled, chopped
1/4 cup feta
Directions:
1. For the dressing, mix olive oil, Dijon mustard, and lemon juice together. Set aside.
2. Mix cooked pasta, shrimp, cherry tomatoes, spinach, shallots, avocado, and feta together; toss.
3. Add dressing and toss; serve or chill.
