A wonderfully refreshing summer salad. This has been a family favorite for over 40 years. When the recipe came to be they used canned salad shrimp (small ones) now I have adapted it to small fresh salad shrimp available at most grocery stores. Read more . Enjoy! Ingredients:
1 lb. small shell macaroni, cooked al dente
1/2 lb. small fresh salad shrimp, rinsed and drained
1/2 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped red onion
1 small jar pimento pieces
2 hard boiled eggs, chopped
3 tbsp. chopped fresh dill
2 tbsp. chopped fresh parsley
1 teas. season salt
1/2 teas. fresh ground pepper
1 cup mayonnaise
2 tbsp. milk
Directions:
1. Put first eight ingredient is large salad bowl.
2. In a small bowl mix together Season salt, pepper, mayonnaise and milk. Mix well and pour over salad ingredients. Stir to combine and cover with plastic wrap. Refrigerate for at least 4 hours for flavors to blend.
