Fresh tasting dip that is quick and easy to make. Good with Scoops tortilla chips.
Ingredients:
1 large avocado, peeled and diced
1 1/2 cups chopped shrimp
1/4 cup minced red onion
1 tablespoon minced cilantro
2 tablespoons lemon juice
salt to taste
Directions:
1. Combine all ingredients except salt in a non-reactive bowl. Taste and add salt and additional lemon juice, if needed.
