Easy to throw together for a quick breakfast. This is light yet filling. Ingrediants are basic.
Ingredients:
1 cup shredded potatoes
2 tsp butter
2 tbls 2% cheddar cheese
1 slice turkey bacon
4 cherry tomatoes
1 salt
1 pepper
Directions:
1. Shredd 1 cup of pototoes and cook over med-high heat in a non-stick skillet with a little butter or oil. Fry up the turkey bacon, cool, crumble and add to potatoes. Add a little cheese to top and melt let melt. Top with halved cherry tomatoes. Salt and pepper to taste.
