Ingredients:
6 ounces cooked boneless, skinless chicken breast
1 red bell pepper (seeded and thinly sliced)
1 cup shredded carrots
1 cup shredded red cabbage
2 tablespoons chopped almonds
1/2 cup canned mandarin oranges, drained
1 tablespoon toasted sesame oil
1 tablespoon low-sodium soy sauce
1 tablespoon rice vinegar
Directions:
1. Shred chicken into a bowl. Add bell pepper, carrots, cabbage, almonds and mandarin oranges. Drizzle with sesame oil, soy sauce and rice vinegar. Toss to coat.
