Ingredients:
2 tablespoons olive oil
4 lbs beef short ribs
1 onion, coarsely chopped
1 (12 ounce) can tomato paste with italian spices
2 2/3 cups water
1/2 teaspoon salt
ground pepper
2 carrots, peeled and cut into 2 inch pieces
Directions:
1. Heat oil in large saucepan over medium heat. Add ribs; cook until browned on both sides.
2. Add onion and cook for 1 minute.
3. Combine tomato paste, water, salt and pepper in small bowl. Pour over ribs; cover.
4. Simmer over low heat for 1 1/2 hours. Add carrots; simmer, covered, for additional 30 minutes or until ribs are tender.
