Shitake And Glass Noodle Salad

Simple, tasty, and fast! I made this dish because I was too sick to leave the house, and really didn't feel like cooking.
Ingredients:
6 shitake mushrooms caps removed and sliced
1 good sized handful of fresh spinach
1/2 cup chicken stock
2-3 tsp. soy sauce
1 tbsp olive oil
2oz single serving dried glass noodle (mung bean noodles)
Directions:
1. 1.Place the noodles in a small sauce pan of water and turn the heat on to high
2. 2. while the noodles come to a boil, heat a saute pan on medium heat. Add oil and mushrooms, and saute for 2-3 minutes.
3. 3. Add the remaining ingredients and cover the pan until the spinach is just wilted.
4. 4. Noodles should be done by the time the spinach has completely wilted. Add to the pan and toss.
